Québec maple syrup is made from a single ingredient: the sap of maple trees. The sap flows every spring when day/night temperatures alternate between thawing and freezing. This natural phenomenon is unique to eastern North America.

There are more than 150 species of maple trees in the world, of which only 4 species provide the maple sap that can be produced into syrup. These are mainly sugar maples (Acer saccharum) (70%) and red maples (Acer rubrum) (29%) and, to a much lesser extent, silver maples (Acer saccharinum) and black maples (Acer nigrum) (1%).
